Thump Bakery Manager
Full Time, Hourly ($25 – $27 per hour)

We are seeking a hands-on leader with baking experience, ready to step into a thriving bakery and take it to the next level. Our bakery produces top-quality pastries for our Bend cafes and wholesale partners, and our goal is to craft patisserie that could rival those found in esteemed French bakeries. We are looking for someone who is passionate about the art of baking, dedicated to maintaining consistency, and enthusiastic about leading a talented and experienced team. This team is prepared to support and teach you everything you need to know about our products, while continuing to deliver the pastries our community loves.

Schedule Requirements
- The Bakery Manager will work 5 days per week.

Key Responsibilities
Daily Bakery Operations:
- Oversee daily bake-off according to Thump standards.
- Work 4-5 days per week in the bakery, bake-off or bake-prep shifts as needed.
- Manage the weekly bakery production schedule
- Mix, shape, proof, and bake a variety of pastries.
- Receive weekly ingredient deliveries, organize and store ingredients properly.
- Maintain cleanliness in the baking area, including dishwashing, mopping, and deep-cleaning.
Team Leadership:
- Interview potential staff in collaboration with Thump’s leadership team.
- Maintain and communicate weekly staff schedules.
- Conduct quarterly check-ins with each team member.
- Lead monthly team meetings and provide regular feedback.
- Train new staff members and foster their development.
Payroll and Inventory Management:
- Track and submit payroll for bakery staff.
- Generate invoices, receive payments, and adjust orders as needed.
- Maintain positive relationships with wholesale accounts and vendors.
- Order ingredients, sourcing local and seasonal products when available.
Quality and Consistency:
- Collaborate with the bakery team to maintain product quality.
- Communicate baking standards and their importance to the team.
- Assist in developing and implementing quality assurance guidelines.
- Ensure cost of goods sold (COGS) and labor percentages align with company goals.
- Maintain accurate inventory systems and par sheets.
Communication & Standardization:
- Attend monthly/quarterly leadership meetings.
- Contribute to the development of new standards as needed.
- Ensure consistency with Thump’s store-to-store standards.
- Communicate changes and product launches effectively.
- Utilize internal systems (G Suite, Slack) promptly.
Qualifications
Skills and Experience:
- Belief that ordinary things can be used for extraordinary good
- Demonstrated success in developing and leading a team to achieve consistent and measurable goals
- Experience with the administrative side of leading a team including building a schedule, performing reviews, and submitting payroll (preferred)
- Skilled at giving and receiving all types of feedback
- Demonstrated understanding of system creation and management
- Must meet all physical demands of the position
- Excellent written and verbal communication skills
- 1-year minimum of baking experience and are comfortable with laminated dough products
- Valid driver’s license for completing wholesale deliveries on an as needed basis
Physical Demands
- Standing and/or walking for extended periods (most shifts are 8 hours)
- Lifting and carrying baking trays, large heavy mixing bowls, and ingredients
- Pushing and pulling baking racks and carts
- Reaching, bending, and stooping to collect heavy ingredients from a variety of areas
- Gross and fine manipulation for rolling, stirring, folding, and shaping products
- Doing large loads of dishes daily
- Keyboarding and sitting in front of a screen to complete administrative tasks
